There is no bigger party scene in Egypt than Sharm al-Sheikh. This international tourist desination is popular with Egyptians and foreigners alike. If you're looking for a more upscale (and more expensive) but still quiet and laidback holiday on the Sinai, you can't get much better than the Hilton hotel at Dahab.
